Homemade Potato Salad

6 cups diced, unpeeled red potatoes
1/3 cup chopped onion
1/3 cup chopped celery
1 clove minced garlic

1 cup light or fat-free mayonnaise
1 1/2 tablespoon fresh, chopped parsley
1 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon pepper

Cover potatoes with water in a medium pot and bring to a boil. Cook until tender, about seven to 10 minutes. Drain water and place potatoes in a large mixing bowl.

Add remaining ingredients and toss well until fully combined. Cover and refrigerate. Flavors will be enhanced if this dish is made a day ahead.
